Executive Chef Hironori Maeda

Chef Maeda sources exclusively the finest Kelp (Kuragakoi Rishiri Kombu) which is aged for six years and only a handful of restaurants in Japan have the privilege to use this prized ingredient. Dried Bonito is another key ingredient at Mizumi. Chef Maeda specifically sources Katsuobushi which involves a long artisanal process of many weeks to create and ensures that only freshly shaved Katsuobushi is served to delight guests with its complex umami flavors. Additionally, expertise extends to 'Charcoal Play,' using premium Binchotan charcoal to grill ingredients at temperatures ranging from 300°C to 1,000°C. This is very challenging as it requires full concentration, precise temperature control, and profound understanding of each ingredient.

Elements in Balance

At the center of the restaurant are three Japanese Koi (Nishikigoi). These “swimming jewels” are a symbol of good luck, prosperity, and good fortune. While dining, guests can enjoy watching the Koi dance playfully in a brilliant display of light.

Helmed by Executive Chef Hironori Maeda, Mizumi is renowned for Michelin-starred and Forbes Travel Guide Five-Star contemporary Japanese cuisine including authentic teppanyaki, as well as for having one of Macau's largest sake collections.

 

Its signature Charcoal-Grilled Eel with Sansho Miso is considered one of Chef Maeda's creative masterpieces. The eel is grilled over premium Binchotan charcoal with precise temperature control to unlock its rich aromas and layered flavors, and served in an exquisite wooden box to preserve its delightful charcoal scent.

 

Another signature dish, Charcoal-Grilled Crispy Rosy Seabass, reinterprets six key flavor elements – rice, fish, soy sauce, vinegar, wasabi, and seaweed – with charcoal-grilled fish wrapped in crispy rice grains, accented by shiso flowers and wasabi, to create a vibrant feast of colors and multi-layered textures that will charm your senses.
